Keiko Goto loves to teach, and her passion for nutrition is contagious.
Of her 20-plus published articles and 30 poster presentations at professional conferences, most are co-authored with students. "I do not work alone," she said to the Chico Enterprise-Record. "It's always collaborative teamwork."
Goto has worked at CSU Chico’s Center for Nutrition and Activity Promotion since 2006 and assumed the role of assistant director for research and evaluation in 2010. “I love the quote by an organization in Canada that promotes locally grown ethnocultural vegetables,” she says. “They say, ‘Eat local, taste global.’”
