He and his college buddies headed to the Baja village of San Felipe every spring where he got hooked on the local fish tacos and perfected a recipe of his own.
He opened his first restaurant—a walk-up stand in Mission Bay—in 1983, with his father.
Since then, Rubio's Restaurants has sold more than 50 million fish tacos from 180 locations.
An industry trendsetter in eco-friendly practices, Rubio's introduced the recyclable "Bottle Box" salad bowl made in California from 100 percent recycled plastic bottles.
